Foodie Fan Fridays! :)

Hi guys! Welcome Back! I hope you've all had a happy and healthy week!
I am thinking of starting a series of healthy food recipes called Foodie Fan Fridays. I am the ultimate foodie so I want to share some of my recipes with you! If you are interested please let me know in the comment box. :)

Today's recipe is CHICKEN AND VEGETABLE STIR FRY!
This lunch or dinner option is super simple, healthy, and SO delicious. It's an easy way to incorporate lean proteins, vegetables, and starch in one filling meal! Get your pots and pans ready and let's get started. :)
All you will need for this recipe is:
- Chicken Breast (you can easily skip this or switch it out for substitute meats to make this recipe vegetarian or vegan friendly!)
-Fresh or frozen vegetables of your choice. I used fresh broccoli and carrots!
-Whole Grain Brown Rice
-Soy Sauce
-Cooking oil
-Sea Salt and Pepper to taste, or any seasonings of your choice
-Two large sauce pans
-One pot

THE NATURALLYKBIGGIE WAY:
1. Chop your thawed chicken breast into small, thin slices. Place raw meat in a bowl and season with soy sauce, sea salt, and pepper.

2. Chop your veggies into thin chunks and lightly season with soy sauce.

2. Heat the two sauce pans on medium heat and lightly coat with extra virgin olive oil, or any oil of your choice.

3. In one pan, begin to cook your chicken breast thoroughly on both sides. DON'T OVER COOK!

4. In the other pan, after about 5 minutes, begin to saute your veggies.

*While both of these are lightly cooking, you can prepare your rice in the pot. I decided to use Boil-In-A-Bag rice because I'm a college student and I'm sure you all understand the struggle lol*

6. Once the chicken begins to brown on both sides, add it to the sauteed veggies and turn the heat down low. Continue to cook the chicken, broccoli, and carrots together on LOW heat for about 5 minutes. Stir occasionally.

7. Now it's ready to plate. I served my stir fry over the brown rice and it was SO yummy.  I can officially say that I've prepared my first, full, "grown up" meal all by myself and it only took about 30 minutes. Here is the finished product! :)
